Unfortunately, no, Windrose demo progress does not carry over to the full Early Access release. This was confirmed by the developers on the demo’s page around the time the demo was released.
That means any progress you made during the demo stays with the demo and will not transfer into the full game. Once you start playing the Early Access version, you’ll be beginning a new adventure from scratch.
